This is a healthy and easy dinner my husband and I both enjoy! Salmon is full of healthy fats and proteins that has numerous benefits for your whole body. The first time I cooked fish I was nervous I’d mess it up but I’ve found numerous ways to cook fish. We usually bake salmon in the oven but since it was a nice night, we decided to use our grill and grill it. The prep time for this meal was minimal and since we wrapped the salmon in tin foil packets the clean up was a breeze.
4 skinless salmon filets
Fresh Green Beans
Half a Lemon
Salt and pepper
3tsp of olive oil
Directions: Start by trimming the ends off the green beans. Then lay out a bed of of green beans on a square of aluminum foil, drizzle olive oil on the beans, add salt and pepper. Season both sides of the salmon with salt and pepper. Layer salmon over the green beans and spread one spoonful of pesto over each of the salmon filets. Drizzle half a lemon over the four filets. Next fold in the sides of the aluminum foil square, fold the other two edges to create a foil pocket.
Throw your 4 packet on the grill for 30-40 minutes, then simply empty the packets onto a plate and enjoy!
